What is honey process?
Drying process is determined normally at the harvesting level when the coffee cherries are tested for brix content to determine what is being picked will be processed a certain way. Through experience and years of processing honey and natural coffees Oscar and Francisca ultimately understand from which of the farms are normally a higher brix content due to altitude, terroir etc.. of that specific farm. Black honey has larger depth (sticky rock formation) on patio for drying compared to red and yellow being more spread out on patio (thinner).

Francisca and her husband Oscar run and operate the revered Las Lajas micromill. These third generation coffee farmers are widely recognized for their highly differentiated processes that produce spectacular quality coffees.
30 years ago, Oscar and Francisca’s father passed away due to pesticide-caused illnesses. From then on, they knew that they needed to change the way they ran las Lajas, leaving behind their old practices for a new way of organic farming. As Pioneers, the Chacón family became one the first farming families to produce organic coffee, remaining to this day one of the only board certified organic farms in Costa Rica.
